Sueños Team Launches New Bar & Street Food Concept "Diego" This Summer in West Town
After a successful year at Soho House, the team behind Sueños — the baja-med concept from Executive Chef Stephen Sandoval — is excited to announce the launch of its newest bar concept, Diego. Located at 459 N Ogden Ave (the former G&O space). The bar is named after Chef Sandoval's hometown of San Diego, and will offer a nod to the bordering Tijuana, where his love for street food was born.
Chef Sandoval and business partner Oscar Sotelo used their time at Soho to test several menus with the intent of eventually launching two distinct concepts "Diego" and "Entre Sueños". Sandoval and Sotelo first met during their tenure with Rick Bayless at Leña Brava. They began hosting private coursed dinners together in 2021 on Chicago’s north side, which led to their 15-month partnership with Soho House. “This opportunity with Diego has allowed us to make an easy transition for our team with our recent departure from Soho,”. The menu is separated by Mar (mariscos-inspired fare) and Calle (street food), expect signature seafood items from Sueños x Soho, in addition to various rotating regional staff favorites.
Highlight dishes include:
- CEVICHE: Snapper, Avocado, Coconut, Cucumber, Habanero
- AVOCADO TOSTADA: Guac, Diosa Verde, Pickled Jalapeños
- TUNA TOSTADA: Salsa Macha, Avocado, Diosa Roja
- PESCADO TACO: Beer-Battered Cod, Arbol, Cabbage, Crema
- GLORIAS “TACO DE CANASTA: Potato, Salsa Cruda, Avocado, Crema
- TJ BURGER: Queso, Macha Aioli, Pickled Jalapeños, Chives, Avocado, Fries
The beverage menu will feature a beer and cocktail program by Danielle Lewis, with vibrant tequila and mezcal cocktails, refreshing frozen drinks, and a variety of Mexican beers. While some of the favorite from Sueños at Soho House will make it onto Diego’s menu — like the Michelada and Oyster, Caliente en Los Tropicos, and Guera — Lewis has created a few new unique offerings in honor of the new concept, including:
- MORADA FLOR: Hibiscus infused Mezcal, Chipotle Pilloncillo Syrup, Lime juice
- UN PERRO: Strawberry infused vodka, miso simple syrup, lime juice, grapefruit juice
- OSCAR’S PIÑA COLADA Rum Blend (white/agricole/dark), Coconut cream, lime and pineapple juice
Diego’s vibrant interior embodies and celebrates the diversity and energy of street art. Inside Diego, a bold and lacquered environment awaits, bursting with vibrant hues. The space is adorned with geometric patterns, thoughtfully complemented by a curated collection of vivid illustrated art. This brand personifies the essence of street art, capturing the spirit of diverse cultures and infusing it into the culinary experience.
Diego opened July 19th to the public, just in time for summer, Diego opening July 19th, 2023 with a festive patio, a rotation of DJ’s a garage-door dining room for an indoor-outdoor feel, and late-night menu, making it the perfect addition to the neighborhood.
