foBT Hospitality is recruiting an Executive Chef for the Floridan Hotel located in Downtown Tampa, Florida. This storied hotel is undergoing a renovation and is soon to open as part of the Hilton Tapestry collection.The restoration will highlight the charm of 1920s while availing guests of all the modern amenities they expect.
The Dan is a 65-seat restaurant on the ground floor which opened earlier this summer. It retained its cool speakeasy vibe and has been particularly well received, averaging 100 guests daily with an active bar scene. It is prominently located at the corner of Floridan and Cass Streets, directly across from the Federal Courthouse. The quickly re-emerging neighborhood has new hotels and residential opening all over.
In addition to the restaurant, there is a takeaway café, Cass Street Coffee Company, and banquet and meeting space spanning 15,000 square feet. The Floridan will continue its lavish tradition of warm hospitality and notable cuisine. This is your opportunity to collaborate on the re-branding and re-concepting of this historic hotel.
We are looking for the highest-caliber, enthusiastic Executive Chef to join the team. You will provide leadership, supervision, and support to the restaurant first and foremost, as well as the entire hotel’s F&B program. The restaurant is open for lunch and dinner, while breakfast will be served in the lobby bar. The hotel does not plan to have room service. Banquet experience is a must. This position is responsible for establishing and maintaining food quality, evaluating and meeting staffing and management needs, training team members and upholding hospitality standards in all venues.
Main Responsibilities:
- Set a standard of excellence for cuisine in the restaurant and other outlets. Ensure the restaurant, café and banquets department deliver maximum hospitality and satisfaction.
- Monitor and improve consistency and quality of cuisine throughout the hotel. Develop innovative and financially successful menus.
- Oversee all training, hiring, performance management, and employee engagement within the department. Provides training opportunities, constructive and positive feedback to team members within area of responsibility. Create a motivating environment.
- Work closely with General Manger to set a standard of excellence for the entire culinary department.
- Responsible for financial planning, forecast, labor, and payroll for the culinary department.
- Maintain relevant knowledge of industry through continuing education and training.
- Ensure kitchen departments are compliant with Health and Safety standards including HACCP.
- Ability to promote positive, fair, and ethical relations with all team members, contractors, and in all interactions within the surrounding communities as an ambassador of the Hilton Brand.
- Facilitates effective communication throughout the property. Creates a motivating environment.
Requirements:
- Minimum 8 years of culinary management experience in a restaurant, hotel or private club.
- Experience with banquets of up to 300 guests a must.
- Strong leadership and communication skills.
- Must possess outstanding organizational, interpersonal skills, and excellent attention to detail.
