Joujou is the highly anticipated new French-inspired dining destination in San Francisco's Design District, created by the team behind the two Michelin Star Lazy Bear and renowned cocktail bar True Laurel.

As Bar Director you will oversee the bar and service team to help form, curate, perfect and grow JouJou’s bar program, and be an extension of the executive management team . You will be responsible for creating and implementing JouJou’s cocktail, liquor, beer, Non-alcoholic, and backbar program.


Essential Job Duties & Responsibilities:


Prior to Opening: Assist ownership and executive management team in appropriate SPIN UP tasks ensuring a successful launch. Including but not limited to selecting back bar products and setting up wholesale accounts with various distributors and purveyors, submitting credit apps and creating organized ordering sheets, procedures, and pars. Assist with purchasing needs for BOH & FOH as necessary; work with service and executive management team to build barware smallwares and serviceware lists and needs.


Strategic Leadership & Operations: Develops and executes the strategic vision for the beverage program. Manages all daily operations, including bar setup, and is responsible for creating and enforcing Standard Operating Procedures (SOPs) to ensure consistency and compliance. A key requirement is active participation in bar shifts, which is essential for maintaining exceptional service standards and maximizing operational flow and efficiency.


Financial Management & Profitability: Collaborates with the General Manager on budgeting and forecasting to achieve COGS and profitability goals. Oversees inventory, rotation, invoice verification, and financial analysis to maximize margins and revenue. Provides rigorous financial oversight, managing pricing, cost control, overtime, P&L, and other key financial metrics to boost ROI. Develops staff product and operational expertise, which is essential for effective upselling, minimizing waste, and efficient service.


Procurement & Vendor Relations: Directs all sourcing, ensuring selections align with brand standards. Builds professional relationships with vendors for competitive pricing and strategic partnerships, and approves all product selections.


Menu Development & Curation: Create a curated, thoughtful, playful, and consistently executable cocktail menu based on classics and personal innovations. Oversees development of all beverage menus (cocktails, spirits, non-alcoholic) to reflect concept integrity and delight customers.


Team Development & Training: Cultivates an excellent bar team culture. Manages recruitment, hiring, and performance. Develops and leads training for product, service, and technical skills. Acts as a coach and quality-control partner, supporting a skilled and passionate bar staff.


Guest Experience & Brand Standards: Works the service floor daily with staff to uphold high standards of hospitality and customer service. Partners with property leadership to maintain service integrity and represents the restaurant with professionalism at industry events.


Experience & Skills:

  • 3+ years in Beverage Leadership, proven success in creating engaging, efficient, and profitable beverage programs.
  • Expertise in developing comprehensive Bar Operations SOPs.
  • Significant experience in recruiting, training, and developing high-performing teams.
