Overview:
We are seeking a counter-facing Sushi Chef specializing in Edo-mae style to join a refined, reservation-only omakase counter in NYC. This role is for a disciplined craftsperson who values precision, restraint, and consistency, and who can deliver an exceptional guest experience through technique, timing, and calm, confident hospitality.

Our restaurant has been recognized by the Michelin Guide many times since 2017. We maintain a high standard of execution and service every night, while fostering a culture that is respectful, collaborative, and genuinely enjoyable to be part of. This is a collaborative kitchen environment. You will be working alongside other chefs, and partnering with our corporate team to align on brand standards, hospitality, and what we execute as a unified team across the company.

Key Responsibilities:
• Execute Edo-mae omakase service at the counter with consistent, refined technique
• Provide polished, composed guest interaction and hospitality throughout service
• Work collaboratively with other chefs to maintain consistency, pacing, and quality every night
• Partner with the corporate team on standards for brand execution, service, and overall guest experience
• Perform fish handling to a high standard, including breakdown, portioning, curing, aging, and storage
• Prepare sushi rice to exact standards, including texture, temperature, seasoning, and timing
• Maintain an immaculate station, tools, and presentation throughout service
• Coordinate pacing closely with the team to protect the flow of the experience
• Uphold strict sanitation, food safety, and product handling standards at all times
• Support prep, organization, inventory awareness, and waste minimization as needed
• Contribute to a positive, professional kitchen culture rooted in respect and teamwork

What We’re Looking For:
• Edo-mae sushi fundamentals are required
• Minimum 5 years of sushi chef experience in high-end restaurants is required
• Strong knife skills and confidence with fish butchery and portioning
• Calm, professional counter presence with a guest-first mindset
• Exceptional cleanliness, organization, and consistency
• Team-oriented, humble, and growth-minded
• Open to learning from others and sharing knowledge with the team
• Deep knowledge of Japanese cuisine, seasonality, and traditional technique is a major plus

Schedule & Compensation:
• Hourly or salary position based on experience
• Schedule based on availability and service needs
